friend tea inheritance

One dear female friend told me few days ago, 
"Hey Brian, don't you think the package of wait a moment is a little bit too young, do you? However the people who are affordable to buy these teas are around 30 to 40 years old. Have you ever thought about change the package?"

Undoubtedly, the package of wait a moment seems for young people, and buyers are older instead. Moreover, the packages of other brands of tea are much more excellent, and brilliant, and customers could buy these teas because of their beautiful appearances without thinking what kinds of tea are they almost.     

Thank you, my dear friend. You reminded me the advantage of the package of wait a moment. Actually wait a moment is for young people and foreigners in the beginning, even till now. Elders know tea, and they know how to enjoy and admire tea because the older generations have shown the spirit and culture of tea. Now it is gone. Young people need something to help them to connect with tea.   

Tea could be kind of a beverage in bottles. The process of make tea with a set of utensils could be a beautiful performance. However the most significant and important meaning of tea is in sado(cha dao). 
 
Most people talk about knowledge of tea loudly. They know a lot of locations of tea, and they could describe the fragrances and tastes of tea with brilliant words. You think they are masters, but they are more like businessmen and far away from sado(cha dao) in this way. 

Have you ever been in a Japanese tea ceremony once? The tempo of Japan tea ceremony is slow and the atmosphere is serious. It is boring, and fascinating. How come?? Yes, it is such a incredible 'thing'. It is sado(cha dao). Tea ceremony are not the most proper words for sado.

Tea is gentle. It could be drank. It could be read. There are a lot of Taiwan tea ceremonies in Taiwan today. People use a set of expensive utensils to brew up tea with dim light and elegant atmosphere. And yes, it is definitely a ceremony although they call it sado.

Something we have to look inside and search in ourselves. Sado is one of these something. The real sado in Taiwan is similar with sado(Japanese tea ceremony) in Japan I think. It should be boring and fascinating. Anyway, when you meet it, you must could recognize it.

Tea is NOT expensive, and NOT too cheap, either.

The price of tea includes the cost of

tea leaves, 
labors, 
packages, 
profit of farmers, 
profit of businessmen,
and so on.

Most of these costs are stable, unless some unpredictable natural disasters happen.

The changeable costs are the profit of farmers and the profit of businessmen. As everyone knows, most farmers are disadvantaged. They are maybe not poor, but would not be rich usually. 

Farmers depend on nature deeply and completely. However, when the goddess of nature smiles to them, they would not get THAT much money. Big quantity causes the price down, and little quantity makes the price up. The profit of farmers are stable, even they want to make it more, businessmen would not "allow" it happened. 

Farmers are disadvantaged in Taiwan. It is shame.
  
The ONLY cost of tea which could changeable is the profit of businessmen. 

It means consumers AT LEAST have to pay the cost of tea leaves, labors, packages, and profit of farmers.

Yes,
the price of tea should not be TOO cheap.

and Yes,
it could be expensive, MORE expensive, and MUCH MORE expensive. 

Do not buy the cheapest tea.

Do not buy the most expensive tea, unless your money is too much.

How to make it?
Go get some knowledge and experience of tea, and DO NOT let books in bookstores teach you how to buy tea. They sucks. If you go buy tea yourself few times, you would figure out that each one give you one way to distinguish tea, and these ways are all different.

That is why we started wait a moment.

Make sure the profit of farmers, save your "too much" money, and make my money. :)

Tea with high quality COULD NOT be used for a cup of bubble tea

Tea with high quality would not be used for a cup of bubble tea.

WHY?

Because tea with high quality is expensive, and a cup of bubble tea is too cheap.

YES.
But it is not the point.


Because tea with high quality owns delicate smell and flavor, sugar and milk would cover(destroy) these essential elements in tea with high quality completely.

YES.
This is the point.




How about if I try to use tea with high quality to make a cup of bubble tea, and see what are going to happen?

YES. 
You can do that and I did that before. 

I could tell you that you will get a cup of sweet and milky water with slight fragrance of tea or maybe not. In fact, it tasted just like kind of WATER. 




Tea with lower quality (have to be lower enough) is good to be used for a cup of bubble tea. 

WHY?

Because tea with lower quality is cheaper, for a cup of bubble tea is economical.

YES.
But it is not the point.


Tea with lower quality tasted much bitter and astringent. Sugar and milk could adjust and decorate the flavor and fragrance of the tea with lower quality magically to become a cup of wonderful bubble tea.

YES.
It is the point.




Is it a cheat?

NO.



Just don't drink bubble tea too much, and don't order plain tea in bubble tea shops. 
It is unhealthy, and dumb. 

YES.

Do not listen to specialists while you are purchasing a package of tea

Recently I had an interesting conversation with one of my best friend, Richer.
He likes Golden oolong tea and Assam black tea in wait a moment.

Richer said, 'What do you think that western people like Chinese tea or not, especially oolong tea?'.

I said, '........'.

Richer said, 'Just like those herb teas, from western countries. Do you like herb tea, such as rose tea, mint tea or fruit tea?'.

I said, 'Hum, I don't like herb very much because ........'.

Richer said, 'See. It is same. Maybe western people feel the same way about oolong tea as you in the beginning. And then you have to introduce the value of oolong tea to them at first. Take them to the entrance of the world of tea. Show them how the world of tea beautiful and various is through professional and relaxed methods.'. 

I said, 'I think you are right. In my opinion, the better way to get close to some things new is to experience them by yourself first , and just remember the feel you get purely. Later, if the experience is wonderful, then figure out which one or two make you impressive. Finally it is the proper time to check the data and go get some information from those "specialists".'.

Richer said, 'Why did you use punctuation marks, " ", here?'. 
( How Richer hear the punctuation marks? :) )

I said, 'The favorite of tea is personal and private. No matter how people are new to the world of tea, their private experience is the most important element in this world. Some people are sensitive about feel, taste, fragrance,and so on, but they are minority. Most people are insensitive, yes. Seems the right way is to listen to "specialists" first, but it is totally wrong.'.

Richer said,'How come?'.

I said, '1st, the world of tea is various. How do you know the "specialists" is professional in which tea? 2nd, it is normal and usual that a person introduce what he or she prefer to you, but you do not like it actually. For example, I like to have a cup of black tea every morning, I will recommend you to have some in the morning unconsciously, if you ask me something about tea. 3rd, I might like oolong tea because of its fragrance, but it does not mean you will like it, even thought I show you everything wonderful about oolong tea hardly. 4th, ........'.

Richer said, 'OK! OK! I understand what you mean. You just said that I am necessary to have my own experience and ideas before I ask for advice, right? And no matter what you or "specialists" say, I should be true and loyal to what I really feel while I am drinking a cup of tea instead of just listen to you or "specialists", and do not ignore my personal feel and experience, even it is small.'.

I said, 'Yes, that is totally right. You are intelligent!'.

Detail is the point

Some famous person said so before. Kind like, 'Success is in detail.'

I have to agree with this mostly because I think that detail is an important point.
Here are some dishes of delicious food...... :L

You can see that there are slices of radishes and oranges. The middle one which clipped between the both is checken chest. If you try to look as closed and detailed as you can, there would be many many spices and condiments overspread in the baking tray. And they are the details who make the chest fragrant and charming. Much more than you can see in a quick glance, much more than you can smell from this picture, and much more than you can image before you eat it. :)

In another way, this tasty foods in an iron pot are also hide something inside. You can see shrimps, green onions, and rice noodles. Looking closer, there are some slices of mushrooms mixed with noodles. After you have a taste, it will surprising you because of its' rich taste of shrimps flavor, the heavy sauce grabbed on the noodles, and the strong curry taste. The point of the rich flavor is the cook make content of shrimps' head into the sauce, but you can not tell just by seeing it. :D It's so delicious.

The cook is a female, and she cares about these details much more than others. And I am the eaterm, so that's why ,in my opinion , detail is so important and significant.  Haha. :))

How to make a cup of Taiwanese tea with a Mug II

In the beginning, we said that it is easy to drink Taiwanese tea and Chinese tea by mugs. 
Just put some tea into the mug first, and the quantity of tea leaves has to cover the bottom of mug almost, and then pour hot water into it.  Done.

Is the quantity of tea leaves in the glass too much?

Is that so easy? Yes.............
But then Brian got some mails and understood that it is no so EASY exactly...............
Beacuse the shapes of every tea leaves are different, it is a big problem to some people who are like scientistsm, which means that they care about the detail very much.........

because of this kind of cup,
we could use the top to stop tea leaves to avoid swallowing them

The best way to figure out if the quantity of tea leaves is enough or too much or less is just do it once first and then see how the tea leaves expands.

While the tea leaves are expanding completely in the mug, finally the height of leaves reaches .............

1. the top of mug, it means that tea leaves is too much. It is obvious that how you could drink the mug of tea juice without swallowing some tea leaves at the same time............. :)



2. the middle of mug, it means that the quantity of tea leaves is quite enough. The tea juice (or tea soup) above the expanded tea lleaves is delicious, and the under one would be a little bitter. It is not a problem actually. Just drink the above tea juice first and add more hot water in it after the above one is drunk off. It could be repeated few times.

3. the quater of mug,it means that the quantity of tea leaves is a little bit less, but still good. Compare to the middle of mug, maybe you just could drink once or twice most by the same tea leaves, and you have to wait for more few minutes before drninking it.

4. the bottom of mug,it means that you are a stingy person....hahahahahaha
Please remind this that no matter drinking tea, wine, or drink (liquor), the worst way to taste them is to make them too thin and poor. 
Or you just go get a glass of pure water instead of. 
Treat yourself good please.

Eventually, it is hard to make the right quantity every time, so why not just enjoy drinking tea juice with happiness everytime and knowing how to adjust the tea leaves and hot water in the mug.

Heavy baked oolong tea is well received recently

All the time, I considered that light baked oolong tea or high mountain oolong tea should be the most popular items of tea.
They are colorful, with fantastic smell and smooth taste. How come they could NOT be the 1st well-sold? Even all books which are related to Chinese tea or Taiwan tea also introduce these 'light' oolong teas so hardly, and positively............lol

 However, I met a particular and interesting situation these days, and this experience made me think about what kind of tea is the real 'most popular' one? For some situations and people, heavy baked oolong tea is definitely the most proper and popular drink.

That thing was when that time my friends had a conference in the evening on Friday. The participators were some professors and teachers, and they are all male exactly and a little old, around 40 to 60 years old.

My friend asked me to arrange some cups of oolong tea for this conference. According to the timing of conference and the age of the participators, my friend and I discussed the detial for a while and decided to brew some heavy baked oolong tea for these a little old and wise gentlemen finally........:)

Why? Why not light baked oolong tea?

A practical tea set to make beautiful tea soup

People used to think about having a tea pot immediately while they want to make a cup of tea.
In fact, only one tea pot is not enough to drink a cup of tea, and it needs a whole tea set to make a cup of tea. A tea set includes a tea pot, a teacup, and few tea cups at least.

So, how about have a practical teacup?

Tea & Wine

烏龍茶 Oolong tea
Every time, after reading some comic books which talk about how to understand and enjoy different kinds of wines, I always think deeply why people cannot drink tea in this way........

Tea trees and grapes are all plants. They are all taken care by sunshine, rain, temperature, soil, and all this kinds of natural elements. It means we cannot control these natural elements, but follow the elements to supply the lacks.

I don't know wines well, but I could understand that some wines tasted worse than average because of severe weather or barren years. Even wines take few years to ripen in oak barrels, the defects could not be cover or fix complitely all the time. Fortunately people could comprehend with it and accept it.

Tea is same as wine, but the difference between tea and wine is making tea just takes few days, not years. If the weather was too hot or too cold, tea leaves might grow too fast to lose flavor, or too slow to lose fragrance, and there are many situations like this. According to these phenomenons, tea leaves SHOULD be worse than average ( or better than average ) sometimes. It is agriculture. It is a plant. It is natural.

All of us have to realize the fact and accept it further, then finally the market of tea could be trusted and people who are interested in tea could really enjoy th world of tea.

What does the cost of tea leaves?

There are a lof ot kinds of tea in the world. Maybe too many.  :)

Here we are going to talk about the price of Oolong tea in Taiwan, but it also could be a helpful standard in your country, we believe it.

What does the price of tea involve in?

1. Fresh tea leaves
    (To make 600g tea leaves, it needs 3000g fresh tea leaves to be the raw materials approximately)
*Fresh tea leaves = the tea leaves tea farmers just pick up from tea trees
*Tea leaves = the tea leaves you usually could purchase in tea stores

2. Labor and works
   According to the process of making tea, it includes the steps: picking up, turning over for fermented,  
   rubbing, grinding, drying, baking, shaping, packing, and delivering.

3. Profit
   Tea farmers need money, middlemen(it could has several levels) needs money, and tea stores also need
   money.

These items are what you pay for to have a bag of tea leaves almost.
Later we could talk about how much tea leaves do cost usually.

Generally, the heavy baked taste and fragrance becomes the noted specific of Dong-Ding Oolong tea.

An inspiration about brewing tea, from making a bowl of Pig Liver Soup

Pig Liver Soup is a famous delicacy in Taiwan. It is popular everywhere, such as night markets, food shops, restaurants, and people's house. According to the name of this soup, the major ingredient in the soup is pig liver. Usually customers could have around 5 or 6 slices of liver in the soup if people order this dish in night markets or restaurants. Also, this was my real experience.

One day, I decided to make a bowl of pig liver soup to my family myself. Then I went to a traditional day market to purchased a piece of pig liver, and that was my first time to buy it and make it become a soup. I asked that lady gently, "Could you slice the liver for me and tell me how to make a bowl of delicious pig liver soup?" That kindly lady told me the ingredients in this soup and how to make the liver tender, like a live recipe, while she was slicing that whole piece of pig liver slices.
